Halibut and Cannelini Bean Stew Recipe

  • 1 16-oz cans organic cannelini beans, drained
  • ½ tsp. saffron threads
  • 1 16-oz cans organic tomatoes, diced with juice
  • 4 tbsp. organic sun-dried tomatoes, thinly sliced
  • ⅓ c. dry white wine
  • 1 cup. organic shallots, sliced
  • 3 Tbsp. organic extra virgin olive oil
  • 6 cloves organic garlic, chopped
  • 1 ½ pounds halibut fillets, cut into 1½-inch chunk
  • 1 c. clam juice (8oz. bottle)
  1. Sauté sun-dried tomatoes and shallots in large pot over medium-high heat about 5 minutes. Add olive oil and garlic; stir 1 minute. Add tomatoes with juice, clam juice, wine, and saffron; bring to boil. Reduce heat; simmer 5 minutes. Add beans and fish; bring to simmer. Cover; simmer until fish is just opaque in center, about 5 minutes. Season stew to taste with salt and pepper.
