Grilled Chicken Parmesan Recipe

Serves: 4
  • 4 medium organic tomatoes, cut into ½-inch-thick rounds
  • 2 Tbsp. fresh basil, chopped
  • 2 oz. organic parmesan cheese, thinly sliced
  • ½ tsp. Celtic sea salt
  • 1 whole organic eggplant, cut into ¼-inch-thick rounds
  • 4 Tbsp. organic extra virgin olive oil
  • ½ tsp. freshly ground black pepper
  • 2 -8oz. breasts pasture-raised chicken breasts
  1. Heat grill to medium.
  2. Place the eggplant and tomatoes in a single layer on a baking sheet and brush both sides with half of the oil. Season with half the salt and pepper.
  3. Grill eggplant until tender, about 2 minutes per side for the tomatoes, 4 minutes per side for the eggplant. Transfer to a large bowl and toss gently with the basil.
  4. Brush the chicken with the remaining oil and season with the remaining salt and pepper.
  5. Grill chicken until cooked through, about 6 minutes per side.
  6. Transfer chicken to a cutting board and slice each breast into eight pieces.
  7. Divide chicken among serving plates, top with eggplant, tomatoes and Parmesan.
  8. Serve.
