Grilled Apricot & Arugula Salad with Goat Cheese Recipe

Ingredients
  • ½ Tbsp. organic balsamic vinegar
  • 1 Tbsp. thyme leaves
  • 4 oz. organic arugula
  • 4 oz. organic goat cheese, cut into 12 slices
  • 6 whole organic apricots, halved and pitted
  • 2 Tbsp. extra-virgin olive oil
  • 1 pinch Celtic sea salt
  • ¼ tsp. freshly ground pepper
  • 2 tbsp. pine nuts
Instructions
  1. Light a grill or prepare Flavorwave/NuWave oven. In a medium bowl, toss the apricots with 1 tablespoon of the olive oil and the thyme and season with salt and pepper. Let stand for 5 minutes. Grill the apricot halves over medium-high heat for about 5 minutes, turning once, until lightly charred and softened. If using the Flavorwave, cook on the top rack at 350 for 5 minutes, with flesh side down. Meanwhile, toast the pine nuts over medium-low heat in a small skillet, stirring until golden, about 2 minutes. Transfer the nuts to a cutting board and finely chop. Add the pine nuts to a medium bowl. Whisk in the vinegar and the remaining 2 tablespoons of olive oil and season with salt and pepper. Add the arugula and toss. Arrange the goat cheese slices on plates. Top with the apricot halves and arugula salad and serve.
