  • 2 tsp. organic lemon zest
  • 5 large organic omega-3 eggs, separated
  • 2 c. grated organic carrots
  • 2 scoops Jay Robb's Vanilla Whey Protein
  • 1 c. organic erythritol
  • 2 c. ground organic almond flour
  • 1 tsp. non-aluminum baking powder
  • ¼ tsp. SweetLeaf® Stevia Extract
  1. Preheat oven to 350 degrees F.
  2. Grease a deep 9" round pan.
  3. Beat egg yolks with lemon zest, erythritol and stevia in a small bowl with an electric mixer until thick. Transfer to large bowl.
  4. Stir in carrot, almond flour, whey powder and baking powder.
  5. Beat egg whites with a clean mixer and bowl until soft peaks form. Fold beaten egg whites gently into carrot mixture.
  6. Pour mixture into prepared pan, bake for 45 minutes to 1 hour or until a toothpick inserted into the center comes out clean.
  7. Top with Cream Cheese Frosting (if desired) and serve.
