Crispy Coconut Almond Chicken (Gluten Free) Recipe

  • ½ c. organic unsweetened shredded coconut
  • 0.125 tsp. organic curry powder
  • 1 pinch Celtic sea salt
  • 5 Tbsp. organic virgin coconut oil, melted
  • ½ c. organic almonds, chopped
  • 2 -8oz. breasts pasture-raised chicken
  1. Preheat oven to 350 degrees F.
  2. Grease 9 x 13 baking dish with coconut oil.
  3. In a small bowl mix coconut, almonds, curry, salt and pepper.
  4. Rinse chicken and pat dry with a paper towel. Set aside.
  5. Melt coconut oil.
  6. Dip chicken in coconut oil, then in coconut/almond mixture.
  7. Place coated chicken in single layer in baking dish.
  8. Drizzle remaining coconut/almond mixture over the top.
  9. Bake 40 minutes or until internal temperature reaches 160 degrees F.
