Ingredients
  • ½ c. organic, grass-fed butter (melted)
  • ¾ c. purified or spring water
  • ½ c. organic pecans, chopped
  • 2.5 tsp. aluminum-free baking powder
  • 1 c. organic erythritol
  • 2 c. whole organic cranberries (fresh or frozen)
  • ⅓ c. organic powdered egg white
  • 2.5 c. ground organic almond flour
  • ¾ tsp. Celtic sea salt (fine)
  • 3 large organic omega-3 eggs
  • ¼ tsp. SweetLeaf® Stevia Extract
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease the bottom of a large 10 inch loaf pan.
  3. Roughly chop the cranberries or pulse in a food processor.
  4. Mix the dry ingredients together (almond meal, egg white, baking powder, salt, erythritol, stevia).
  5. Mix the wet ingredients together (melted butter, eggs, water).
  6. Mix the dry ingredients into the wet.
  7. Fold in the pecans and the cranberries.
  8. Pour batter into pan and bake about 40-50 minutes, until top is golden brown and toothpick comes out clean.
