Coconut Waffles

Coconut Waffles Recipe

Ingredients
  • 1 c. organic coconut milk
  • ½ tsp. aluminum free baking powder
  • ½ tsp. Celtic Sea Salt
  • 2 large pasture-raised eggs
  • ½ c. ground organic almond flour
  • 1 c. shredded coconut, unsweetened
  • ½ tsp. organic cinnamon (to taste)
Instructions
  1. Add eggs to bowl with coconut milk. Whisk well.
  2. Mix in shredded coconut, almond meal, salt, baking powder and cinnamon. Stir to combine thoroughly.
  3. Heat a safe waffle iron and spray with organic high heat nonstick spray.(NOTE: Be sure your waffle iron is PTFE and PFOA free.)
  4. Pour batter onto waffle iron and close the lid. Cook 2-3 minutes. The waffle is done when steam no longer escapes from the waffle iron and the waffle is lightly browned and crispy.
  5. Serve.
