  • ¼ tsp. organic cinnamon
  • 1 pinch organic nutmeg
  • ¼ c. organic coconut milk
  • ¼ tsp. organic vanilla extract
  • 4 large organic omega-3 eggs
  • 4 Tbsp. Bob’s Red Mill Organic Coconut Flour
  1. In a medium bowl, whisk together eggs, coconut milk and vanilla. Add dry ingredients to wet and mix well to combine.
  2. Let batter sit for five minutes.
  3. Meanwhile, coat a safe nonstick pan with cooking spray and heat over medium heat.
  4. Pour about ¼ cup of batter into pan for each pancake. Cook until golden, then flip.
  5. Serve.
