  • 2 Tbsp. spring or filtered water
  • 1 packet SweetLeaf Stevia Plus® Sweetener
  • 2 c. organic shredded unsweetened coconut
  • 4 large organic egg whites
  • 1 c. organic erythritol
  • 1 tsp. organic vanilla extract
  1. Preheat oven to 375 degrees F.
  2. Line baking sheet with unbleached parchment paper.
  3. Measure egg whites. If they aren't quite ½ cup, add a little water to reach that level.Mix in the vanilla.
  4. In a small bowl, mix erythritol and stevia with coconut.
  5. Mix dry ingredients into wet ingredients. The mixture should just hold together.
  6. Let stand 2 minutes.
  7. Roll into 1-inch balls and place on a baking sheet at least half an inch apart. Slightly flatten or embellish as you'd like - they will retain their shape.
  8. Turn the oven down to 325 degrees F and bake 13-15 minutes, or just until light golden brown on the bottom with a golden hue on top.
  9. Cool slightly and serve.
