Citrusy Mojito Chicken Recipe

Ingredients
  • 8 drumsticks organic chicken
  • ½ c. chopped organic red onion
  • 2 whole organic limes
  • ½ tsp. freshly ground black pepper
  • 2 whole organic red grapefruits
  • 2 Tbsp. organic mint, chopped
  • ¼ c. organic extra virgin olive oil
  • 2 Tbsp. organic cilantro, chopped
  • ½ tsp. Celtic sea salt
Instructions
  1. Light a grill, preheat a grill pan or prepare your Flavorwave/NuWave oven.
  2. Peel the grapefruit and lime, making sure to remove the bitter white pith.
  3. Squeeze the juice of one grapefruit and one lime into a medium non-reactive bowl.
  4. Stir in half each of the olive oil, cilantro and mint. Season with half of the salt and pepper. Add the chicken and toss to coat. (Option: Marinate 30 minutes or up to 4 hours)
  5. Grill the chicken thighs over moderately high heat, turning them occasionally, until they are cooked through, 8 to 10 minutes.
  6. Meanwhile, coarsely chop the remaining grapefruit and lime sections and transfer to a bowl. Add the red onion and the remaining olive oil, cilantro and mint. Season with salt and pepper.
  7. Serve the chicken thighs with the citrus salsa.
