Citrus-Thyme Roasted Cornish Hens Recipe

  • 2 whole organic Cornish game hens
  • 2 tsp. organic orange zest
  • 1 Tbsp. organic extra virgin olive oil
  • 6 sprigs fresh organic thyme
  • 1 whole fresh organic orange, juiced
  • 2 tsp. freshly ground black pepper
  1. Preheat oven to 350 F.
  2. Set thyme sprigs aside to garnish each serving.
  3. Finely chop the remaining thyme sprigs.
  4. In a small bowl, whisk orange juice, olive oil, orange zest, shallot and chopped thyme.
  5. Place Cornish hens, breast side down in a glass baking dish with a lid.
  6. Pour the marinade over the hens, cover and roast 45 minutes, or until juices run clear.
  7. Remove from oven, allow to cool slightly; cut each hen in half lengthwise and garnish with a thyme sprig.
