Ingredients
  • ¼ tsp. SweetLeaf® Stevia Extract
  • 1 pinch Celtic sea salt
  • 7 Tbsp. Spectrum Organic Shortening
  • 5 Tbsp. Wholesome Sweeteners Organic Zero
  • 6 Tbsp. organic cocoa powder
  • 2 Tbsp. organic coconut milk
  • 1 ½ tsp. organic vanilla extract
Instructions
  1. Powder erythritol in a Magic Bullet or coffee grinder, pulsing, until very fine.
  2. Cream the shortening in a small bowl until fluffy.
  3. Add powdered erythritol into shortening and beat until smooth.
  4. Slowly add the cocoa powder vanilla, and salt.
  5. Beat in the coconut milk.
  6. Add stevia, starting with 1/16 teaspoon and increasing to achieve desired sweetness.
  7. Chill and spread on cake or cupcakes.
