Ingredients
  • ¼ c. organic balsamic vinegar
  • 6 oz. pasture-raised chicken breasts
  • ¼ c. organic extra virgin olive oil
  • 4 oz. fresh organic mozzarella, sliced thick
  • ½ tsp. Celtic sea salt
  • 1 medium organic tomato, sliced thick
  • 24 leaves fresh basil, chopped
  • ½ tsp. freshly ground black pepper
Instructions
  1. Split the breasts and pound to ½ inch thickness.
  2. In a shallow dish, season the chicken cutlets with half of the salt and pepper. Drizzle with half of the oil and all of the vinegar.
  3. Cook the chicken. GRILL METHOD: Preheat an outdoor grill to medium-high heat. Cook for 2-3 minutes each side or until a meat thermometer reaches 165 degrees F. FLAVORWAVE/NUWAVE METHOD: Place cutlets on top rack and cook at 350 degrees F for 6-8 minutes or until a meat thermometer reaches 165 degrees F.
  4. Remove chicken from grill and place each cutlet on a serving plate.
  5. Top evenly with tomato and mozzarella slices, basil, olive oil and remaining salt and pepper.
  6. Serve.
