Ingredients
  • 2 medium organic cucumbers, peeled,cut into ⅛" slices
  • 2 Tbsp. chopped fresh scallions
  • 8 oz. organic soft goat cheese
  • 2 Tbsp. fresh parsley, finely chopped
Instructions
  1. Let goat cheese soften until pliable. Meanwhile, mix scallions and parsley and place on a plate. Form goat cheese into three balls. Roll each ball in scallion mixture and set on serving dish. Refrigerate until ready to serve.
