Arugula Salad with Salmon, Tomato and Avocado Recipe

  • 2 Tbsp. organic extra virgin olive oil
  • 1 tsp. honey
  • 1 medium organic avocado, sliced
  • 4 medium small organic radishes, thinly sliced
  • ½ tsp. Celtic sea salt
  • ¼ tsp. freshly ground black pepper
  • ¼ small organic red onion, sliced thin
  • 6 c. Earthbound Farm Baby Arugula Earthbound Farms Arugula
  • 2 Tbsp. organic balsamic vinegar
  • 2 cans Wild Planet Alaskan Sockeye Salmon
  • 1 medium organic tomato, cut into chunks
  1. Drain salmon and flake into chunks
  2. In a small bowl, whisk together the oil, balsamic vinegar, honey, salt, and pepper.
  3. Divide the arugula among bowls and top with the avocado, onion, radishes, tomato and salmon chunks.
  4. Drizzle with dressing.
  5. Serve.
