Chinese Five Spice Sweet Potato “Coins” Recipe

Ingredients
  • 2 medium organic sweet potatoes, cut in ½" slices
  • 2 Tbsp. organic almond oil
  • 2 tsp. Frontier Five Spice Powder
Instructions
  1. Preheat oven to 425 F.
  2. Grease a baking sheet with oil.
  3. Cut sweet potatoes into ¼" slices and place into a medium bowl.
  4. Drizzle oil over potatoes and toss well with hands to coat.
  5. Sprinkle Five Spice Powder over potatoes and toss again to coat.
  6. Layer "coins" on baking sheet and transfer to middle rack of oven.
  7. Bake for 7-10 minutes, then flip.
  8. Bake an additional 5-7 minutes (watching carefully not to burn).
  9. Remove from oven and allow to cool for a few minutes. (Note: Potatoes will crisp as they cool.)
  10. Serve.
