Healthy Duck Dinner: Duck Breast, Roasted Squash and Asparagus

by Kelley Herring on April 4, 2014

If you love poultry, and want a delicious alternative to chicken, bring this healthy duck dinner to the table.

Some people shy away from duck because of its rich flavor or seemingly difficult cooking techniques. But making the perfect seared duck breast – with crispy skin and all –  is surprisingly simple. And while duck is a richer-flavored dark meat, those new to duck will find it has a taste quite similar to dark turkey meat (only better!)

And what about all of that FAT? Duck raised the right way is a nutritional powerhouse with a high levels of monounsaturated fat  – a healthy fat that reduces inflammation, promotes heart health and even helps to reduce unsightly (and dangerous!) belly fat.

At around $10 per 12-oz. duck breast, this dinner makes a perfect special occasion dinner for two for about $25 – less than what you’d pay for a low-quality meal at most restaurant chains.
