Bain-marie

Creating a bain-marie, the French name for water bath, consists of placing a container (typically a bowl) of food in a large, shallow pan filled with warm water. Bain-marie is typically used to cook delicate dishes such as custards and sauces.  It can also be used to keep cooked foods warm.
