A recent study published in the European Journal of Nutrition studied the effects of a carrot-enriched diet on cholesterol, triglyceride levels and markers of oxidative stress.
Researchers found the group enjoying the carrot-enriched diet had a 41% decrease in cholesterol and a 49% decrease in triglycerides in serum. They also had a 16% increase in antioxidant status.
Enjoy carrots as a quick and healthy snack dipped in hummus and chop, dice and juice them into your meals.
