Zucchini Chocolate Chip Mini-Muffin

This Recipe:

Preparation

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, whisk together coconut flour, salt, baking soda and cinnamon.
  3. In a large bowl, combine eggs, oil, agave and grated zucchini.
  4. Thoroughly mix dry ingredients into wet, then stir in chocolate chips.
  5. Spray a mini muffin tin with coconut oil and lightly dust with coconut flour.
  6. Spoon approximately 1 tablespoon of batter into each muffin cup.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool and serve.
