Shrimp and Broccolini Stir Fry

Preparation

  1. Heat 1 tablespoon of the oil in a large, nonstick skillet over medium high heat--do not allow oil to smoke.
  2. Cook the shrimp until golden and almost cooked through, about 1 minute on each side, and then transfer to a dish.
  3. Heat the remaining tablespoon of oil in the skillet over moderately high heat, then saute the ginger and garlic, stirring until golden.
  4. Add the broccolini, water, hoisin, soy sauce, and red pepper flakes. Cook, stirring occasionally, just until the broccolini is tender, about 5 minutes. Stir in the shrimp and cook until heated through.
  5. Serve with brown rice, quinoa or Miracle Noodles.
