Salmon Nicoise Sandwiches

This Recipe:

Preparation

  1. Combine onions, oil, vinegar in a medium non-reactive bowl. Toss well and allow to stand 10 minutes.
  2. Drain salmon and crush small bones. (NOTE: You may remove the bones if you choose, but they do add calcium and are undetectable when mashed.)
  3. Mix salmon with onion mixture. Add lemon juice. Gently toss.
  4. Cover slice of bread with arugula leaves.
  5. Top with sliced egg and salmon mixture.
  6. Serve as open-faced sandwiches (or sandwich halves) and garnish with lemon wedges.
