Rich Dark Chocolate Brownies (Low Carb, Gluten Free, Dairy Free)

Preparation

  1. Preheat oven to 350 degrees F and grease a 9X13 pan.
  2. Add the chocolate chips to a small saucepan and heat over low heat, stirring occasionally.
  3. In a large bowl, add the erythritol, stevia and coconut oil. Cream with an electric mixer until fluffy.
  4. Add the vanilla and eggs, one at a time, mixing well.
  5. Add the cocoa and melted chocolate, and mix well.
  6. Stir in the remaining ingredients and mix well to combine.
  7. Fold in the walnuts.
  8. Pour into a pan and bake for 35 to 40 minutes or until top springs back and a toothpick inserted into the brownies comes out clean.
  9. Cool completely and cut into squares.

Loved these brownies, but then, I love coconut with chocolate. With the coconut butter and the coconut milk you did have a noticeable coconut flavor. My husband wasn't crazy about them because of that, although my friends did like them. I substituted the 3/4 tsp. SweetLeaf Stevia extract and the 2 c. erythritol with 1 and 1/2 c. of "Steviva", (a combination of stevia and erythritol,) because that's what I had and the proportions to compare to sugar were different. They were plenty sweet for me with nice texture.
