Primal Protein Brownies (Gluten Free, Dairy Free, Grain Free)

This Recipe:

Preparation

  1. Preheat oven to 350 F. Sift coconut flour. After sifting it should come to 1/2 cup - no more or the brownies will be too dense. Grease an 8 x 8 x 2 inch pan.
  2. Melt coconut oil over low heat in a small pan. Stir in cocoa powder. Set aside to cool.
  3. In a large mixing bowl, whisk eggs, vanilla, salt, stevia, and erythritol to combine. Stir in cocoa.
  4. Add sifted coconut flour and whisk well to thoroughly combine. No lumps!
  5. Pour batter into greased pan and bake 30 minutes.
  6. Remove from oven, cool, and cut into squares.

These are delicious! I've never used coconut flour before and was worried because my husband doens't like coconut. He had no idea and loved them too. The texture is about halway between a brownie and a cake. But they're super moist and very yummy.

Very good; more like a chocolate spongecake. Moist and tasty. I kept the coconut oil/cocoa mixture warm until just before use and the result was a lovely smooth, easy to mix batter. (thanks to a previous reviewer's insight)

honestly theres no gaging but not my cup of tea. I have yet to use coconut flour and not have it be spungy and grainy like i can feal evry fiber in my mouth. I would avoid this unless you enjoy coconut flour and or have exprience with it.
