Homemade Graham Crackers (Gluten Free, Dairy Free, Sugar Free)

This Recipe:

Preparation

  • Preheat oven to 225 degrees F.
  • In a medium bowl, combine almond meal, flax seed meal, erythritol, cinnamon, baking powder and salt.  Mix well.
  • Add in coconut oil, egg, yacon and vanilla and stir to form a dough.
  • Transfer to freezer and chill 10 minutes.
  • Place chilled dough on a sheet of unbleached parchment paper. Top dough with another sheet. Roll out dough between sheets of parchment to 1/8 inch thick. Make sure dough is of even thickness on interior and edges to prevent burning.
  • Remove top layer of parchment. With a sharp knife, score dough into 2 inch crackers.
  • Place parchment paper on cookie sheet and transfer to the oven.
  • Bake one hour or until firm and edges are crispy. Turn off oven and leave crackers in oven another half hour to an hour.
  • YIELD: Makes 20 2-inch squares.
