Grilled Eggplant and Tomatoes with Parmesan Basil Crumbs

Preparation
Lightly toast bread and break into pieces. Place pieces in a food processor, blender or Magic Bullet. Grind or pulse to make crumbs. Preheat the oven to 400°F. Spread the bread crumbs on a large rimmed baking sheet and drizzle with 1 tablespoon of oil; toss well. Bake for 6-8 minutes, until the bread crumbs are crisp and golden. Transfer the bread crumbs to a medium bowl. Toss with the basil and cheese. Light a grill or prepare your Flavorwave/NuWave oven. Brush the eggplant slices with oil and season with salt and pepper. Grill over moderate heat until tender, about 2 minutes per side (if using Flavorwave, use top rack setting and cook at 375°F for 4-5 minutes). Transfer the eggplant to a platter. Brush the tomatoes with oil. Grill over moderate heat about 1 minute per side (if using Flavorwave, use top rack setting and cook at 375°F for 3-4 minutes). Arrange the tomato slices over the eggplant and drizzle with oil. Sprinkle the bread crumbs over the top and serve right away.
