This Recipe:

Preparation

  1. First, make breadcrumbs. Toast bread and place in a Magic Bullet or blender to grind.
  2. Preheat the oven to 350 degrees F. Line a baking sheet with unbleached parchment paper.
  3. In a large mixing bowl, combine the ground beef and pork. Add the onion, garlic, carrots, ketchup, molasses, balsamic vinegar, parsley, bread crumbs, and sea salt. Mix gently to combine. Do not over-mix.
  4. Rub a little olive oil on your hands and form the meatball mixture into 1-inch balls. Place on the lined baking sheet.
  5. Bake for 25-30 minutes until no longer pink in the center.
