Preparation
Prepare the cilantro sour cream by adding cilantro, hot sauce, 2 Tbsp lime juice and sour cream to a small bowl. Mix well and refirgerate. Prepare other quesadilla items--chop the tomatoes, shred the cheese--and set aside. Next, mix scallops, remaining lime juice, olive oil, red onion, yellow pepper slices and garlic in a non-reactive bowl. Grill until scallops are cooked through (turning after 1 or 2 minutes). Put on a serving platter. Preheat oven to 350 F. Place 2 tortillas on a baking sheet. Top each with scallops, onions, peppers, and cheese. Cover with another tortilla and bake 15-20 minutes to melt cheese. Remove from oven and slice each quesadilla into 6 slices. Serve with chilled cilantro sour cream.
