This Recipe:

Preparation

  1. In a medium bowl, add the eggs and beat with a fork.
  2. Heat a medium safe non-stick pan over medium heat. Add the oil and swirl to coat.
  3. Add the spinach and saute until wilted, about 2 minutes.
  4. Pour the eggs over the spinach and cook, stirring, until opaque, about 4 minutes.
  5. Add the cheese and cover to melt.
  6. Slice the tortilla in half.
  7. Spoon egg mixture into tortilla, sprinkle with salt and pepper, fold over and serve.
