Farmer's Breakfast Wrap (Gluten Free)

Preparation

  1. In a medium bowl, add the eggs and beat with a fork.
  2. Heat a medium safe non-stick pan over medium heat. Add the oil and swirl to coat.
  3. Add the onion and peppers and cook 2 minutes, stirring.
  4. Add the mushrooms and cook 2 more minutes.
  5. Add the eggs and cook, stirring, about 2 minutes.
  6. Add cheese and cook another 2-3 minutes or until eggs are opaque and cheese is melted.
  7. Slice the tortilla in half.
  8. Spoon egg mixture into tortilla, fold over and serve.
