Enchiladas Griegos Recipe with Spinach and Feta

Preparation

Heat a tablespoon of olive oil in a medium skillet over medium-high heat. Add 4 cloves of the garlic and cook, stirring, for one minute. Add the spinach. Stir. Cook for a few minutes until most of the liquid has been reduced. Add the roasted peppers and white beans, and stir gently to combine. Season with nutmeg, sage, sea salt and pepper. Remove from heat. Stir in 2 oz. cheese. Next make the sauce. Combine fire roasted tomatoes, remaining garlic, salsa and vinegar in a food processor or blender until smooth. Set aside. Now assemble tortillas. Fill each tortilla with ¼ of the spinach filling. Roll snug and place in a baking dish, seam side down. Repeat for the other tortillas. Spoon sauce over tortillas. Top with remaining cheese and bake at 350 F for 15 minutes. Serve.
