0.125 tsp(s)
organic curry powder
1 pinch
Celtic sea salt
5 Tbsp(s)
organic virgin coconut oil, melted
1/2 cup(s)
organic almonds, chopped
2 -8oz. breast(s)
pasture-raised chicken

Preparation
Preheat oven to 350 degrees F.
Grease 9 x 13 baking dish with coconut oil.
In a small bowl mix coconut, almonds, curry, salt and pepper.
Rinse chicken and pat dry with a paper towel. Set aside.
Melt coconut oil.
Dip chicken in coconut oil, then in coconut/almond mixture.
Place coated chicken in single layer in baking dish.
Drizzle remaining coconut/almond mixture over the top.
Bake 40 minutes or until internal temperature reaches 160 degrees F.
