This Recipe:

Preparation

  1. In a medium bowl, whisk together eggs, coconut milk and vanilla. Add dry ingredients to wet and mix well to combine.
  2. Let batter sit for five minutes.
  3. Meanwhile, coat a safe nonstick pan with cooking spray and heat over medium heat.
  4. Pour about 1/4 cup of batter into pan for each pancake. Cook until golden, then flip.
  5. Serve.
