Coconut Macaroons

These classic cookies get a healthy makeover with low glycemic sweeteners. Go ahead and indulge - with only one gram of sugar per cookie and a good source of fiber, these are sweet treats you can feel good about enjoying.

Preparation

  1. Preheat oven to 375 degrees F.
  2. Line baking sheet with unbleached parchment paper.
  3. Measure egg whites. If they aren't quite ½ cup, add a little water to reach that level.Mix in the vanilla.
  4. In a small bowl, mix erythritol and stevia with coconut.
  5. Mix dry ingredients into wet ingredients. The mixture should just hold together.
  6. Let stand 2 minutes.
  7. Roll into 1-inch balls and place on a baking sheet at least half an inch apart. Slightly flatten or embellish as you'd like - they will retain their shape.
  8. Turn the oven down to 325 degrees F and bake 13-15 minutes, or just until light golden brown on the bottom with a golden hue on top.
  9. Cool slightly and serve.
