Chocolate Truffles (Vegan, Sugar Free)

This Recipe:

Preparation

  • Powder erythritol in a coffee grinder or Magic Bullet blender.  Preheat oven to 350 degrees F.
  • Chop the dark chocolate bars and add to a double boiler or a metal bowl over a simmering pot of water. Add erythritol, coconut milk and stevia, stirring to incorporate.
  • Add coconut oil and stir until melted.  Stir in rum. Adjust amount of stevia if necessary.
  • Pour into an 8 by 8 glass dish and freeze for 10-20 minutes, or until firm.
  • Meanwhile, place the coconut and pecans on a cookie sheet (keeping separated). Transfer to the oven and bake 5-8 minutes, stirring once or twice until golden.
  • Scoop out truffles with a melon baller or rounded teaspoon measure. Roll quickly into balls, and set on cookie sheet lined with wax paper. Freeze for five minutes.
  • Melt the 70% chocolate bar and add a pinch of stevia to sweeten, if desired.
  • Prepare the dry coatings. Add cocoa powder, toasted coconut and toasted pecans to three separate shallow dishes.
  • Dip the chilled truffle fillings into melted chocolate with a fork, them immediately roll in nuts, coconut or cocoa powder. Store refrigerated in an airtight container in the fridge, or on the counter top for 24 hours.
  • Serve at room temperature.

Any idea how much 12 pieces of that chocolate is???? It would be helpful to give the ounces/grams equivalent. Not everybody has this specific chocolate in their pantry. Would love to make this recipe but now I am stuck not knowing the quantity if chocolate to use, bummed!
