Chicken Cacciatore

This Recipe:

Preparation

  1. In a large safe nonstick skillet, heat oil over medium-high heat.
  2. Add chicken to pan in two batches, and sear on both sides. 
  3. Transfer to a plate.
  4. Add onion, garlic and rosemary to pan. Sauté 4 minutes, or until onion is softened.
  5. Add wine and bring to a boil. Stir in salt and red pepper flakes.
  6. Return chicken and accumulated juices to skillet. Cook until almost all the wine has evaporated, about 2 minutes.
  7. Add tomatoes.
  8. Cover, reduce heat to low and simmer 30 minutes, to cook chicken through.
  9. Transfer chicken to a serving platter.
  10. Boil sauce 2 minutes to thicken and drizzle over chicken.

This is my all-time favorite recipe for company. It pleases picky kids, yet still presents as a beautiful grown-up dish. Serve with grilled veggies, spaghetti squash and low glycemic pasta (buttered) to make everyone happy :-)
