Carrot Cake (Gluten Free, Grain Free)

This Recipe:

Preparation

  1. Preheat oven to 325 degrees F.
  2. In a large bowl, combine almond flour, salt, baking soda and spices.
  3. In a separate bowl, whisk together eggs, agave and oil.
  4. Stir carrots, raisins and walnuts into wet ingredients.
  5. Mix wet ingredients into dry ingredients.
  6. Pour batter into two greased, round 9 inch cake pans.
  7. Bake for 35 minutes.
  8. Cool, and frost if desired with Cream Cheese Frosting, Coconut Cream Frosting or Cashew Cream Frosting.
  9. Serve.
