This Recipe:

Preparation

  • In a large bowl, combine almond flour, salt, baking soda and cinnamon.
  • In a separate bowl, mix together eggs, oil, erythritol and stevia.
  • Stir carrots and pecans into wet ingredients.
  • Stir wet ingredients into dry.
  • Scoop a heaping ¼ cup batter into paper lined cupcake pan.
  • Bake at 325° for 18 to 22 minutes.
  • Cool to room temperature and spread with healthy frosting of choice.
  • Serve.

My 5 year old son and I both love this recipe! I didn't have almond flour, but I had lots of raw almonds in the freezer, so I ground some up in the magic bullet. I also had to cook them a lot longer than the instructions say, but they turned out great!
