Preparation
In a small, non-reactive bowl, mix the mayonnaise, garlic, and lemon juice. Refrigerate. GRILL METHOD: Preheat the grill for high heat. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside. FLAVORWAVE METHOD: Brush vegetables with olive oil on each side. Set rack at top position (high). Place veggies on grill. Cook 3-6 minutes on 350 F or to desired doneness. Lightly toast bread. Spread some of the mayonnaise mixture on one side of the bread, and sprinkle with feta cheese. Layer with vegetables. Slice diagonally. Toast in oven or Flavorwave to melt cheese, if desired.
