Preparation

  1. First, quarter and peel the rutabagas.
  2. Using a vegetable peeler, a sharp knife or a mandolin, carefully shave to 1/8 inch thick.
  3. In a very large safe nonstick skillet, melt the butter over medium heat.
  4. Add the rutabagas and season with salt and pepper.
  5. Increase the heat and cook, tossing, until tender , about 10 minutes.
  6. Serve.
