This Recipe:

Preparation

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, combine coconut flour, salt and baking soda.
  3. In a large bowl, combine eggs, agave, oil and vanilla and blend well with a hand mixer.
  4. Mix dry ingredients into wet, blending with a hand mixer.
  5. Gently fold in blueberries.
  6. Place unbleached cupcake liners in cupcake pan.
  7. Pour batter into liners.
  8. Bake for 20-25 minutes
  9. Cool and serve.
