Baja Fish Tacos (Gluten Free)

A clever (and healthy!) riff on the classic taco

Preparation

  1. Brush the halibut with half of the taco sauce.
  2. BROILER METHOD: Place fish on a broiler pan. Broil 4 inches from the heat for 5 minutes per side per inch thickness of fish, or until the fish is opaque and flakes easily when tested with a fork. FLAVORWAVE METHOD: Cook on top rack at 350 F for 8-10 minutes or until opaque.
  3. Transfer the halibut to a medium bowl and flake with fork. Mix in the remaining taco sauce and toss to coat.
  4. Warm tortillas in the oven or Flavorwave for 5 minutes. While tortillas warm, arrange ingredients for filling.
  5. Remove tortillas from oven and place on a flat surface.
  6. Divide the lettuce among the tortillas, arranging in a row.
  7. Top with the flaked fish, scallions, Monterey Jack cheese, salsa and sour cream.
  8. Squeeze lime juice over the filling and fold the tortillas and serve.
