Preparation
To make avocado "bowls", slice avocado in half. Using a spoon go around the outside and remove the fruit from the skin, and discard seed.
Mix the garbanzos, shredded carrot and red onion together.
Mix the crushed garlic, balsamic vinegar and oil.
Pour dressing over garbanzos and carrots, spoon into avocados and serve.
