Preparation

Blanch arugula--plunge in boiling water until bright green, then immediately into ice water to preserve it`s color. Drain and set aside. Finely chop walnuts or pulverize in a coffee grinder. Add arugula, walnuts, garlic, broth and olive oil to a blender, food processor or Magic Bullet. Blend until smooth.
