Arugula, Roasted Tomato, and Goat Cheese Salad

This Recipe:

Preparation

  1. Preheat oven to 350° F.
  2. Whisk oil and vinegar to make a dressing.
  3. Combine the tomatoes and 2 tablespoons dressing; toss well to coat.
  4. Arrange tomatoes, cut sides up, on a jelly-roll pan coated with cooking spray.
  5. Bake at 350° for 30 minutes or until tomatoes soften. Cool completely.
  6. Combine tomatoes, baby arugula, and onion in a large bowl. Drizzle with the remaining dressing; toss gently to coat.
  7. Top with cheese and pepper and serve.
