Almond-Crusted Pork Tenderloin

This Recipe:

Preparation

  1. Lightly toast bread. Add to a Magic Bullet or blender to grind into breadcrumbs. 
  2. Preheat oven to 425 degrees F.
  3. Trim fat from pork. Combine breadcrumbs, salt, rosemary, pepper and almonds in a shallow dish.
  4. Dip pork in egg whites; dredge in breadcrumb mixture.
  5. Place pork on a broiler pan coated with cooking spray.
  6. Bake for 30 minutes or until meat thermometer registers 160°.
  7. Cover with foil, and let stand 10 minutes.
  8. Cut into 1/4-inch-thick slices.
  9. Serve.
