Agave Almond Cake

This Recipe:

Preparation

  1. Preheat oven to 425 degrees F.
  2. Coat a 9-inch round springform pan with cooking spray.
  3. Beat egg yolks with agave nectar, vanilla, baking soda and sea salt in a large mixing bowl with an electric mixer on medium speed until well combined.
  4. In a separate bowl, beat egg whites (ensuring the beaters are dry) on medium speed until very foamy but not stiff (about 2 minutes).
  5.  Gently fold the egg whites into the nut mixture just until combined. Pour into prepared pan.
  6. Bake until golden brown and a toothpick comes out clean (25-27 minutes).
  7. Run a knife around the outer edge of the cake and let completely cool.
  8. Serve.

Very good. The top and bottom of mine burned, so I'm thinking lower the temp and cook longer, but the inside is fantastic. Very moist, good texture, and great flavor!
