Dextran


Dextran is a polysaccharide produced by bacteria growing on sugar.

It is used as a plasma expander in medicine, a foam stabilizer in beer, and a mild sweetener as a substitute for barley malt. 

There is some concern about the safety of dextran, however it is still on the GRAS list.
