Coconut Cheesecake Squares

This ultra-low carb cheesecake gets its sweetness from stevia - a zero calorie, zero carb sweetener that comes from sweet green leaves of a plant native to Paraguay. For the "real deal" pour the filling into an Almond Crust.Then chill and serve.

This Recipe:

Preparation

  1. Preheat oven to 350 degrees F.
  2. Lightly coat 11 x 7 square pan with oil.
  3. Cream butter and cream cheese on high speed until fluffy.
  4. Add eggs one at a time. Beat well.
  5. Gradually beat in erythritol.
  6. Add coconut flour, stevia and vanilla and beat until blended.
  7. Pour into pan and bake for 30 minutes.
  8. Cool and slice into squares.
  9. Serve.

There is no crust like the photo shows. I followed the recipe exactly (even though it doesn't mention the coconut oil when mixing things) and it was just thick like bread mix. It did not pour into the pan, it clunked into the pan and I pushed it down with the spatula. Then it tasted like someone used too much sweet n low, even though I used 1/4 cup(s) organic erythritol. I think a quarter cup was WAY too much. This tasted so bad and left such an awful after tasted, just like sweet n low used to do! Sorry, I looked at everything twice. My husband even checked to make sure I followed the recipe exactly, but it did NOT turn out for me at all. I'm afraid to try anything else. (I really didn't have the extra money I spent on all the organic ingredients at this time either) :-(
