Salad dressings - typically an emulsion of vinegar, oil, spices and herbs - have been enjoyed since ancient times. In fact, some historians believe the Babylonians used oil and vinegar for dressing greens nearly 2,000 years ago.

While the use of salad dressings has been primarily for the purpose of boosting flavor, new research shows that they help to boost nutrition, as well. Because many of the salad vegetables we use are high in lipid-soluble nutrients, eating them with a bit of fat helps the body to absorb and assimilate these health-promoting nutrients.
